INGREDIENTS

  • 12 lasagna noodles
  • 2 cups alfredo sauce
  • 15 oz ricotta cheese
  • 1 egg
  • 1/2 cup parmesan cheese
  • 2 cups shredded mozzarella cheese divided)
  • 1 TBS italian seasoning
  • 1 tsp garlic powder
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 2 cups shredded cooked chicken (rotisserie chicken works great)

Directions:

  1. Preheat your oven to 350 degrees.
  2. Cook your lasagna noodles according to package directions.
  3. Spread 1 cup of you alfredo sauce on the bottom of a 9x13 inch pan.
  4. Mix together your egg and your ricotta in a medium sized bowl. Mix in your parmesan and 1 cup of your mozzarella cheese.
  5. Add in your italian seasoning, garlic powder, pepper, and salt.
  6. Add in your shredded chicken and mix everything together.
  7. Put 1/4 cup of the cheese chicken mixture on each lasagna noodle and roll up lasagna noodle. Put roll up into your prepared pan. Repeat with additional mixture and noodles.
  8. Spread remaining alfredo sauce over the top of your roll ups. Top with additional mozzarella cheese.
  9. Bake in oven for 15 minutes.

Tuscan Chicken Mac And Cheese


INGREDIENTS

  • 2 large skinless boneless chicken breasts pounded to 1-inch thickness (or 4 boneless and skinless chicken thigh fillets)
  • Salt and pepper, to season
  • 1/2 teaspoon paprika (sweet or smokey)
  • 1/2 teaspoon dried parsley
  • 1 tablespoon oil, divided (use olive or canola oil)
  • 2 tablespoons butter
  • 1 small yellow onion chopped
  • 6 cloves garlic finely diced
  • 1/3 cup white wine OPTIONAL (use chicken broth instead if you wish)
  • 9 oz (250g) jarred sun dried tomato strips in oil (reserve 2 tablespoons of oil and drain the rest)
  • 3 level tablespoons flour
  • 2 cups chicken broth
  • 3 cups milk OR light cream* or half and half, divided
  • 2 teaspoons dried Italian herbs
  • 10 ounces (300g) elbow macaroni uncooked (3 cups!)
  • 3 cups baby spinach leaves
  • 1 cup fresh grated Parmesan cheese
  • 3/4 cup mozzarella cheese shredded
  • 1/2 cup grated cheese Cheddar or Gruyere
  • 2 tablespoons fresh parsley chopped

INSTRUCTIONS

  1. Season chicken with salt, pepper, paprika, dried parsley and 2 teaspoons of the oil. Heat the remaining oil in a large (30cm or 12-inch) pot or pan over medium-high heat. Add the chicken and sear on both sides until golden brown, cooked through and no longer pink in the middle. Transfer chicken to a warm plate, tent with foil and set aside.
  2. To the same pan, add the butter and fry the onion and garlic until the onion becomes transparent, stirring occasionally (about 2 minutes). Pour in the white wine and allow to simmer for 5 minutes, or until beginning to reduce down.
  3. Add the sun dried tomatoes with 2 tablespoons of the sun dried tomato oil from the jar and cook for 1-2 minutes to release as much flavour as possible.3.

  • 1 head Romaine lettuce, chopped into bite-sized pieces
  • half of a small red onion, peeled and thinly-sliced
  • 2 (14 ounce) jars quartered artichoke hearts, drained and roughly chopped
  • 1 (12 ounce) jar roasted red peppers, drained and diced
  • 1/2 cup toasted pine nuts
  • 1 batch zesty red wine vinaigrette
  • optional garnish: extra freshly-grated Parmesan cheese
ZESTY RED WINE VINAIGRETTE INGREDIENTS:
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup red-wine vinegar
  • 1 teaspoon Italian seasoning, store-bought or homemade
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon garlic powder

DIRECTIONS:

TO MAKE THE SALAD:
  1. Add all ingredients together in a large bowl, and toss until evenly combined. 
  2. Serve immediately, garnished with extra Parmesan cheese if desired.

Ingredients

750 g / 1.5 lb chicken thighs , skin on, bone in, halved along bone (Note 1)
MARINADE:
2/3 cup / 150 ml yoghurt , plain
1/2 cup / 125 ml water
2 tbsp vegetable oil (or other plain oil)
6 garlic cloves , minced
2 tsp finely grated fresh ginger
1/8 tsp ground turmeric
1/4 tsp cinnamon
1/2 tsp cayenne (adjust spiciness to taste)
1/2 tsp ground cardamom
2 tsp garam marsala (Note 2)
2 tsp coriander
1 tbsp cumin
2 tbsp paprika , sweet / ordinary (not smoked)
1 3/4 tsp salt
PAR BOILED RICE:
2 tbsp salt
10 cloves
5 dried bay leaves
1 star anise
6 green cardamon pods
2 1/4 cups / 450g basmati rice (Note 3)
CRISPY ONIONS (NOTE 4):
2 medium onions (yellow, brown) , halved and finely sliced
1 cup / 250 ml oil , for frying
SAFFRON:
1 tsp saffron threads (loosely packed) (Note 5)
2 tbsp warm water
BIRYANI:
1 cup coriander / cilantro , chopped
60 g / 1/4 cup ghee or unsalted butter , melted (Note 6)
GARNISH:
Crispy onions (above)
Chopped coriander / cilantro
Yoghurt (Note 7)


Instructions

Mix Marinade in a large pot (about 26cm / 11" diameter). Add chicken and coat well. Marinade 20 minutes to overnight.
PAR BOILED RICE:
Bring 3 litres / 3 quarts water to the boil, add salt and spices.
Add rice, bring back up to the boil then cook for 4 minutes, or until rice is just cooked still a bit firm in the middle. Rice will taste salty at this stage, disappears in next stage of cooking.

INGREDIENTS

MARINADE


  • 1/4 cup brown sugar ($0.16)
  • 3 Tbsp soy sauce ($0.26)
  • 2 cloves garlic ($0.16)
  • 1 Tbsp fresh ginger, grated ($0.05)
  • Freshly cracked pepper ($0.05)
  • 1 Tbsp cooking oil ($0.04)

CHICKEN


  • 8 boneless, skinless chicken thighs (about 1.75 lbs total) ($7.10)
  • 1/2 Tbsp cooking oil ($0.02)
  • GARNISHES (OPTIONAL)
  • 2 green onions ($0.17)
  • 1 tsp sesame seeds ($0.07)

INSTRUCTIONS


  1. Mince the garlic and grate the ginger using a fine holed cheese grater or box grater. In a small bowl stir together the brown sugar, soy sauce, garlic, ginger, some freshly cracked pepper (about 15 cranks of a pepper mill), and cooking oil. Place the chicken thighs in a shallow dish or a gallon size zip lock bag. Pour the marinade over the chicken and turn to coat. Cover the chicken and marinate for at least 30 minutes or up to a day (refrigerated).
  2. When ready to cook the chicken, heat a large skillet over medium flame. Once hot, add 1/2 Tbsp cooking oil and swirl to coat the bottom of the skillet. Add half of the chicken pieces and let cook until well browned on each side and cooked through. Remove the cooked chicken to a clean plate, then repeat with the second batch.
